Cranberry-Pomegranate Relish

Ingredients

  • BOIL:
  • 1 cup pomegranate juice1 cup
  • 3 ⁄4 cup sugar3⁄4 cup
  • 1 Tbsp. minced orange zest1 Tbsp.
  • 1 ⁄2 tsp. ground cardamom1⁄2 tsp.
  • ADD:
  • 1 bag fresh or frozen cranberries (12 oz.)1 bag

Preparation

1 cup pomegranate juice1 cup
3⁄4 cup sugar3⁄4 cup
1 Tbsp. minced orange zest1 Tbsp.
1⁄2 tsp. ground cardamom1⁄2 tsp.
ADD:

1 bag fresh or frozen cranberries (12 oz.)1 bag

Boil pomegranate juice, sugar, zest, and cardamom in a saucepan over medium heat, stirring until sugar dissolves.

Add cranberries; simmer until berries burst and relish thickens, 10–12 minutes. Chill relish, at least 2 hours or up to 2 days, then transfer to a serving bowl.
