Ingredients
- 1 1/2 c. flour
- 3 Tbsp. baking powder
- 1/2 tsp.baking soda
- 1/2 tsp. salt
- 1 1/2 Tbsp. sugar
- 1 cup buttermilk
- 1/2 cup cold water
- 1 egg
- 3 Tbsp. butter, melted
- 1/2 tsp. vanilla extract

Who needs pancake mix when you can make your own quick, easy and fresh hotcakes with just a few pantry ingredients?
DIRECTIONS
Prepare stovetop griddle or large non-stick frypan lightly wiped with cooking oil. Preheat the cooking surface to just before smoking.
Sift together dry ingredients. In a separate bowl whisk together wet ingredients. Slowly fold dry ingredients into wet. Do not over stir. Resultant batter should be loose and lumpy. Add more water if necessary.
Using a 1/4 C measure drop batter onto heated surface. Set timer for 1min 30seconds. Turn. 1min 30seconds.
