Pepper Jelly

Ingredients

  • 1/2 c. white vinegar
  • 1/4 c. dry red hot peppers
  • 1 whole green pepper (cut & seeded)
  • 6 1/2 c. sugar
  • 1 1/4 c. vinegar
  • 6oz bottle of Certo
  • 1/4 t. green or red food coloring

Preparation

Step 1

Mix 1/2 cup white vinegar, red peppers, and green pepper in blender; will be slightly lumpy. Slow boil sugar and 1 1/4 c. vinegar in large sauce pan. Stir often until sugar is dissolved and clear. Add pepper mix cook 4 minutes and strain to clean pan. Bring to rolling boil. Add 6oz. bottle of Certo and 1/4 t. red or green food color. Pour into jars and cover with wax.
