Tomato Lentil Soup

Ingredients

  • 5 c. chicken broth
  • 3 1/2 c. chopped tomatoes
  • 1 c. lentils
  • 1/2 c. uncooked barley
  • 1 onion, chopped
  • 2 ribs celery, chopped
  • 2 tsp lemon juice
  • 2 tbs soy sauce
  • 1/4 tsp cumin
  • 1/4 tsp basil
  • 1 c. frozen gr peas
  • 1/4 c. fresh chopped parsley
  • Salt to taste

Preparation

Step 1

Put broth, tomatoes, lentils, barley and onion in soup pot. Bring to a boil for 3 minutes. Reduce heat and simmer for 30 minutes. Add celery, carrot, lemon juice, cumin and basil. Continue to simmer 20 minutes longer. The last 10 minutes add peas, parsley and salt.
