MARROWS AND RICOTTA PASTA

Ingredients

  • • 1 lb acaroni (or farfale) cook and drained
  • • Olive oil
  • • 2 garlic cloves
  • • 1 to 2 minced marrows
  • • Saltl and pepper
  • • 60 g (2 oz) or more of dry ricotta or grated parmesan
  • • Fresh basil

Preparation

Step 1

In a casserole warm up the olive oil and saute the marrow just to brown them. Take them out and reserve in a warm oven. Brown the garlic in the same way and crush with a fork. Put the marrows back in the casserole with the marrows and mix well. Season with salt and pepper. Serve in a serving dish and sprinkle with basil and parmesan cheese.
