Ingredients
- 1/2 cup boiling water
- 1/2 cup Bran Buds
- 1/2 cup dried fruits or raisins
- 1/2 cup chopped nuts
- 1 tbsp flour
- 1 cup buttermilk
- 1 1/4 tsp baking soda, dissolved in the buttermilk
- 1 egg, beaten
- 1/4 cup grape-seed oil
- 1 1/4 cups unbleached flour
- 1/4 tsp salt
- Another 1/2 cup dry Bran Buds
- 3/4 cup packed brown sugar
Preparation
Step 1
Grease muffin tins and preheat oven to 375F.
Pour boiling water over the first 1/2 cup Bran Buds.
Cut up dried fruits, add nuts. Sprinkle the fruits and nuts with 1 tbsp of the measured flour to prevent the fruits and nuts from settling at the bottom of the muffins.
Mix together the buttermilk, baking soda, egg and grape-seed oil.
In a separate bowl, mix together the flour, salt, second 1/2 cup of Bran Buds and brown sugar.
Add dry ingredients. Stir and add fruits and nuts. Fill the muffin tins to the top and bake for about 25 minutes. Test with a toothpick. They may take a bit more time. Remove from oven, cool and remove from pan.
