Ingredients
- 1/2 cup coconut flour
- 1 tbsp cinnamon
- 1/4 tsp baking soda
- salt to taste
- 5 eggs (whites and yolks separated)
- 1/2 cup coconut oil, melted
- 1/2 cup banana, mashed (green tip for 21DSD)
- 1 tablespoon vanilla extract
Preparation
Step 1
Preheat oven to 350.
Line a greased bread pan with parchment paper, making sure some sticks out on both sides (to make removal easier).
Mix together coconut flour, cinnamon, baking soda, and salt.
In a separate bowl, whisk together yolks (setting aside whites), coconut oil, banana, and vanilla.
Combine wet and dry ingredients, mixing thoroughly.
With a hand mixer or stand mixer, whisk egg whites until stiff peaks form (this will take a few minutes).
Fold whites into other ingredients until well incorporated.
Pour batter into bread pan evenly.
Bake for 30-35 minutes, or until a toothpick in the middle comes out clean.
Let cool in pan for about 10 minutes, then remove from pan and cool completely on wire rack.
Slather with butter, jam, nut butter, etc. and eat uppppp!
