Parmesan-Herb Broiled Tomatoes

Ingredients

  • 8 plum tomatoes, halved lengthwise
  • 1 tablespoon chopped fresh thyme
  • 2 teaspoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons grated parmesan cheese
  • 2 tablespoons chopped fresh basil

Preparation

Step 1

1. Preheat broiler and spray broiler rack with non-stick spray
2. Toss together tomatoes, thyme, oil, salt and pepper in a large bowl. Arrange tomatoes cut side up, on broiler rack.
3. Broil 6 inches from heat until tomatoes are tender and lightly charred, about 5 minutes on each side.
4. Transfer tomatoes to platter; sprinkle with parmesan cheese and basil.
