CHERRY OR BLUEBERRY MUFFINS

Ingredients

  • 1/8 tsp cinnamon
  • 1/2 cup sugar
  • 2 cups sifted flour
  • 4 tsp baking powder
  • 3/4 cup sugar
  • 1 tsp salt
  • 1 cup blueberry or cherries, frozen or caned (drained)
  • 2 large eggs
  • 1/2 cup butter, melted
  • 1 cup milk

Step 1

1. TOPPING: Combine cinnamon and 1/2 cup sugar in a small bowl. Set aside.

2. MUFFINS: Preheat oven to 400F. Line muffin tins with paper cups and set aside.

Sift dry ingredients together in large bowl. Add blueberries or cherries to dry mix. Mix until well coated. In a small mixing bowl, beat eggs. Add melted butter and milk. Quickly stir liquid into dry mix. DO NOT OVER MIX. Fill muffin cups three-fourth full. Sprinkle with topping. Bake for 20 minutes or until brown.
