Oatmeal Shortbread Cookies

Ingredients

  • 1 c butter
  • 1 tsp almond extract
  • 1 c rolled oats (not instant)
  • 3/4 c brown sugar,packed
  • 2 c sifted flour
  • Sugar

Preparation

Step 1

Cream butter,brown sugar and almond extract together well
Add flour and rolled oats
Blend well,first with a spoon and then with your hands
Pat,or roll,1/2 " thick
Cut into small oblongs 2" x 1/2" wide
Put on ungreased cookie sheet
Sprinkle with sugar (pink coloured sugar is pretty)
Makes about 3 dozen
Bake at 350 F for 10 min or until lightly browned
