Brazilian Black Bean Soup

Ingredients
- 4 strips of thick sliced bacon, diced
- 8 oz.kielbasa, diced
- 1 cup onions, diced
- 1 T.minced garlic
- 2 t.chili powder
- 1/2 t. kosher salt
- 2 cans black beans,drained and rinsed
- 1/2 rice
- 6 cups chix broth
- 3 cups Roma tomatoes, seeded and diced
- Sour cream, for garnish

Preparation
Step 1
Saute bacon in a soup pot over medium heat;remove and drain on paper towels, and pour off all but 1 T.drippings. Add Kielbasa and brown in drippings;remove, drain on paper towels,and pour off all but 1T. drippings. Add onions,garlic,chili powder, and salt;saute until vegetables are soft,2-3 minutes.
Stir in beans and mash. Add rice,cook for 1 minute, then deglaze with 1 cup of broth,scraping up bits at bottom of pot. Add remaining broth along with bacon and sausage;reduce heat to medium and simmer until rice is tender,about 20 minutes. Add diced tomatoes and simmer until they are hot. Serve with a dollop of sour cream.
