Baked Chicken Packets with Zucchini and Tomatoes

Ingredients

  • 4 150 gram skinless boneless chicken breasts
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cubed zucchini
  • 4 plum tomatoes, each cut into 6 wedges
  • 8 Kalamata olives, pitted and sliced
  • 1/4 cup chopped fresh basil
  • 4 teaspoons sodium reduced chicken broth (or water)

Preparation

Step 1

1. Preheat oven to 450F. Cut 4 sheets of foil.
2. Sprinkle chicken with salt and 1/8 teaspoon pepper.
3. Place 1 chicken breast half on each sheet of foil.
4. Toss together zucchini, tomatoes, olives, basil and remaining pepper in a medium bowl.
5. Arrange vegetables mixture evenly over chicken.
6. Sprinkle 1 teaspoon broth over each.
7. Crimp foil into packets, making tight seal.
8. Place packets on baking sheet and bake until chicken is cooked through and zucchini is tender, about 35 minutes.
9. Let stand for 5 minutes, transfer to plate and drizzle with juices.
