Ingredients

  • Dry ingredients:
  • 3 c. flour
  • 1 t. baking soda
  • 1-2 t. cinnamon
  • 1 t. salt
  • 1/2 t. baking powder
  • Wet ingredients:
  • 3 eggs beaten
  • 2 c. sugar
  • 1-3 t. to vanilla
  • 1 c. of oil. 2 cups of A-Z
  • 1 c. chopped nuts (optional)
  • A-Z ingredients:
  • Apples, peeled and shredded
  • Applesauce
  • Apricots (dried), chopped
  • Bananas (ripe), mashed
  • Carrots, shredded
  • Coconut
  • Cherries, pitted and chopped
  • Dates, pitted and chopped
  • Egg plant, peeled and finely chopped or pureed
  • Figs (dried), chopped
  • Grapes (seedless), chopped
  • Honey, use 1/2 c. and omit sugar
  • Lemon, use 1/2 c. juice and 1 1/2 c. other ingredients
  • Marmalade, use 1 c. in place of 1 c. of sugar
  • Oranges, peeled and chopped
  • Peaches, peeled and chopped
  • Pears, peeled and chopped
  • Pineapple (canned), crushed and drained
  • Dried plums, pitted and chopped
  • Pumpkin, canned
  • Raisins
  • Raspberries, unsweetened fresh or frozen
  • Rhubarb, chopped fresh or frozen
  • Strawberries, fresh or frozen
  • Sweet potatoes, cooked and mashed
  • Zucchini, peeled and grated

Preparation

Step 1

Combine well ingredients, and mix well. Combine dry ingredients, mix and add to wet. ingredients. Mix well and pour into 2 greased 9 x 5 inch loaf pans. Bake at 325 def. for 50-60 mins.
