Ingredients
- 1 1/2 lb. hot sausage
- 1 medium onion, chopped
- 1 medium green pepper, chopped
- 36 flour tortillas
- 1 dozen eggs, beaten
- 1 large shredded cheddar cheese
- 1 1/2 lbs. frozen hash browns

Preparation
Step 1
Brown and drain sausage; scramble eggs, adding salt and pepper. Cook potates until soft. Saute onions and green pepper. Warm tortillas. Combine sausage, eggs, potatoes, onions, and peppers in large bowl. Put a scoop of mixture on each tortilla; add cheese; roll up, heat, and serve.
Serve salsa and sour cream on the side.
