Ingredients
- 1 large extra 2 servings graham cracker pie shell
- 1 large package vanilla pudding (Cook & Serve) Not instant pudding
- 2 4oz packages of cream cheese
- 1/2 Cup milk
- 1/2 Cup packed brown sugar
- 2/3 Cup Key Lime Juice
- 1 Can evaporated milk
- Whipped cream and lime slices

Preparation
Step 1
Place vanilla pudding and brown sugar in medium sauce pan.
Stir in milk, key lime juice and evaporated milk.
Cook mixture as directed on pudding box, stirring constantly until until begins to thicken.
Add cream cheese (small sections at a time) to pudding mix, stirring until each section is melted into pudding mixture before adding the next piece of cream cheese.
Remove mixture from heat and pour into graham cracker crust.
Cool cheesecake in refrigerator.
Garnish with whipped cream and lime slices.
