Chicken Piccata

Ingredients

  • Flour
  • Vegetable or olive oil
  • 3 large cloves garlic
  • 2 oz white wine
  • 1 can Campbell's chicken broth
  • 1/2 lemon
  • Butter
  • Boneless chicken breasts

Preparation

Step 1

Dredge meat lightly in flour
Generously coat the bottom of a large frying pan with oil
Saute meat in oil
When meat is browned,remove it and dump out the remaining oil
Brown up the remaining brown bits and add crushed garlic
Add wine,stir, scraping the bottom with a fork
Add chicken broth and lemon
Return meat to pan
Stir,coat and simmer until the desired consistency of sauce is reached (maybe 1/2 hr)
Optional-at the end add a dollop of butter for flavour
