over ripe bananas, mashed
tsp. baking soda
cup chopped walnuts, more to taste
1. Sift together all dry ingredients, except nuts if using. 2. Cream butter and sugar, add eggs, vanilla and bananas. 3. Stir the dry ingredients into the wet, saving the nuts until the end, blend all well. 4. Scrape into a greased loaf pan and bake for 50 - 60 minutes at 350 degrees. I sometimes add a pinch of cinnamon or nutmeg or both. I have also added the nuts to the top of the bread instead of folding them into the batter. Another option that's nice is to coat the inside of the greased pan with poppy seeds.
