Chocolate may be chopped, grated or curled to use for garnish. Always handle the chocolate as little as possible, use utensils that are absolutely dry and refrigerate the garnishes if not using immediately.

To make chocolate curls, put a bar or a chunk of chocolate on foil in a warm, not hot, place on the stove to soften. The chocolate should be warm and pliable but still able to hold its shape. Hold chocolate firmly on cutting board; with a warm dry vegetable parer, using a firm steady stroke, slowly pull parer toward you, across the surface of the chocolate. The chocolate will curl as it is pulled. For wide curls, use the wide side of the bar; for narrow curls, the thin side.

Refrigerate the curls until firm - handle gently.
