Ingredients

  • 1/3 to 1/2 cup each chopped green pepper & onion
  • 1 lb. hamburg, cooked until lightly browned
  • 4 sliced tomatoes
  • 5 About 5 small or 3 medium, sliced zucchini
  • 2 tsp salt
  • 3/4 cup uncooked rice
  • 1 cup tomato juice or V-8 juice
  • 1/4 tsp pepper or 1/2 tsp basil
  • 1 Tbsp chopped parsley
  • 1 cup shredded cheese

Preparation

Step 1

Fry green peppers and onions with hamburg, drain. Arrange 1/2 of the sliced zucchini over tomatoes. Sprinkle with 1/2 tsp of salt. In a bowl, combine rice and hamburg, 1 tsp salt, tomato juice, pepper or basil and parsley; mix well and spread over first layer. Top this layer with remaining zucchini and tomatoes. Sprinkle with remaining salt. Cover and bake at 375 degrees for about 1 1/2 hours. Uncover and sprinkle with shredded cheese. Bake 10 to 15 minutes longer. Enjoy!
