Ingredients

  • ⅓ to ½

    cup each chopped green pepper & onion

  • 1

    lb. hamburg, cooked until lightly browned

  • 4

    sliced tomatoes

  • 5

    About 5 small or 3 medium, sliced zucchini

  • 2

    tsp salt

  • ¾

    cup uncooked rice

  • 1

    cup tomato juice or V-8 juice

  • ¼

    tsp pepper or ½ tsp basil

  • 1

    Tbsp chopped parsley

  • 1

    cup shredded cheese

Directions

Fry green peppers and onions with hamburg, drain. Arrange 1/2 of the sliced zucchini over tomatoes. Sprinkle with 1/2 tsp of salt. In a bowl, combine rice and hamburg, 1 tsp salt, tomato juice, pepper or basil and parsley; mix well and spread over first layer. Top this layer with remaining zucchini and tomatoes. Sprinkle with remaining salt. Cover and bake at 375 degrees for about 1 1/2 hours. Uncover and sprinkle with shredded cheese. Bake 10 to 15 minutes longer. Enjoy! Cyndy
