Ingredients

  • 1 tsp. vegetable oil
  • 1 . lg. onion
  • 1 lb. ground beef
  • 1 pkg. au jus gravy mix
  • 2 T. French onion soup mix
  • 2 cloves garlic
  • 3 T. Worcestershire sauce
  • 1 pkgs. commercially-prepared mashed potatoes, or use homemade leftovers
  • 1 c. frozen green peas
  • 1 c. frozen yellow corn kernels
  • 1 T. butter
  • 1/2 c. shredded sharp Cheddar cheese

Preparation

Step 1

Turn on broiler. Heat oil in a skillet over medium heat. Chop onion and add it to skillet. Add ground beef and cook, stirring frequently. Add Worcestershire sauce. Meanwhile, prepare the au jus mix in the microwave according to package directions. Add the prepared au jus mix, French onion soup mix and garlic to skillet. Microwave potatoes, uncovered, at High, for 2 minutes. Then add peas and corn to skillet, stir gently to mix. Remove potatoes from microwave and stir in butter. Let the beef mixture cook until slightly thickened, about 3 minutes (you may add cornstarch to thicken more). Spoon beef mixture into a casserole dish, spoon potatoes on top of beef mixture, and then sprinkle cheese on top. Place casserole under broiler until cheese melts, about 1 minute.
