Marinara Sauce

Ingredients

  • 4 T's olive oil
  • 5 garlic cloves, minced
  • 2 - 28 oz cans ready cut peeled tomatoes or 5 pounds fresh tomatoes, peeled and sliced
  • 1 - 6oz can tomato paste
  • 4 T's sun-dried tomatoes chopped
  • 10 fresh bay leaves
  • pepper
  • grated cheese

Preparation

Step 1

1. In a deep 10 inch fry pan, heat olive oil and gently saute' the garlic 2. Add tomatoes and paste and sun dried tomatoes 3. Place on medium heat for 20-30 minutes, stirring occasionally. 4. Tear basil leaves into small pieces and sprinkle on top after adding to pasta. 5. Pepper and cheese to taste. Notes: 1- can add 1 medium onion finely chopped to saute with the garlic. 2. If fresh tomatoes - place in pot of boiling water 10 seconds until skin can be easily peeled off. Discard skin. Cut tomatoes into pieces and add to frying pan mixture along with paste and sun dried tomatoes.
