Ingredients
- 1/4 cup olive oil
- 1/4 cup fresh lemon juice
- sea salt and freshly ground pepper to taste
- 2 2/4 lbs. zucchini, thinly sliced
- 1 lb. chicken breasts
- 1 T grapeseed oil
- 8 oz. spinach leaves, chopped
- 1/2 red onion, thinly sliced
- 3/4 cups chopped pecans
- 1/4 cup chopped fresh mint
Preparation
Step 1
Whisk together olive oil, lemon juice, salt&pepper in a large bowl. Add zucchini and toss to coat. Set aside. Heat grapeseed oil in a skillet over medium heat. Season chicken with sea salt&pepper. Cook until golden brown on both sides, about 7 minutes per side. Remove from skillet and slice thinly. Toss chicken with zucchini mixture, spinach, pecans and mint. Serve immediately.
