SOUTHWEST SKILLET

Ingredients

  • ¾ pound ground beef
  • 1 Tbsp chili powder
  • 1 can condensed beefy mushroom soup
  • ¼ cup water
  • 1 can (about 15 oz) kidney beans, rinsed and drained
  • 1 can (14.5 oz) whole peeled tomatoes, cut up
  • ¾ cup uncooked Minute Original rice
  • ½ cup shredded cheddar cheese (2 oz)
  • crumbled tortilla chips

Preparation

Step 1

In medium skillet over medium-high heat, cook beef and chili powder until browned, stirring to separate meat. Pour off fat.

Add soup, water, beans and tomatoes. Heat to a boil. Reduce heat to low. Cover and cook 10 minutes.

Stir in rice. Remove from heat. Cover and let stand 5 minutes. Top with cheese and chips.
