Ingredients
- 1 pkg (500 g) Misura brand whole grain spaghetti (available at Italian shops)
- 1/2 cup (125mL) pine nuts, toasted
- 1 wedge (150 to 200 g) Gorgonzola or Cambozola cheese, rind removed, and chopped into large chunks
- 3/4 cup (125 mL) basil leaves, roughly chopped
- 5 or 6 medium sized ripe tomatoes, chopped
Preparation
Step 1
While pasta is cooking, toast the nuts and prepare the other ingredients. When the pasta is done, drain into a colander. Do not rinse the pasta and put it immediately back into the hot pot.
Throw the rest of the ingredients and stir until the cheese melts. Add fresh ground pepper to taste.
Serve with hearty Italian red wine, a loaf of bread and a green salad to round out the meal.
