Savannah Red Rice - Paul Deen

Love Paula Deen! This dish can be prepared ahead of time and baked right before the guests start arriving.

Ingredients

  • 3 tbsp butter
  • 1 cup chopped yellow onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped andouille or other smoked sausage
  • 1 cup long-grain white rice
  • 1 can (15 oz) crushed tomatoes
  • 1 cup chicken broth
  • 1 tsp hot sauce
  • pinch of salt
  • pinch of black pepper

Preparation

Step 1

Preheat the oven to 350. Lightly grease a 13x9-inch baking dish with butter, oil, or cooking spray.
In a medium saucepan, melt the butter over medium heat. Add the onion, bell pepper, and sausage and cook until the vegetables soften, 5 to 7 minutes. Stir in the remaining ingredients and bring to a simmer. Cook until the sauce begins to thicken, about 10 minutes.
Scrape the mixture into the prepared baking dish and cover with foil. Bake until the rice is tender and the sauce is bubbling, 40 to 45 minutes. Serve hot.
