Ingredients

  • Crust
  • 2 cubes butter
  • 2 cups flour
  • 1/2 cup powdered sugar
  • Filling
  • 4 Eggs (beaten with a fork)
  • 2 cups sugar
  • 4 Tbls flour
  • 1 tsp baking powder
  • 1/4 cup lemon juice
  • zest of 1 whole lemon

Preparation

Step 1

Crust
Put in food processor and blend
Press mixture over bottom of 9 x 13 pan
Bake at 325 for 20 minutes until lightly browned

Filling
Mix all ingrediants
Pour onto crust and bake at 325 for 20 to 30 minutes (Bakery oven is a convection oven. It bakes for about 20 to 25 minutes)
Sprinkle with powdered sugar.
When cool, cut into 12 equal squares and then again on a diagonal.
