Broccoli & Rice Casserole

A great recipe for anyone who likes brocolli but needs a little "cheese" to make it just right. Gathered from the Where Hearts Gather Cookbook- one of my favorites.

Ingredients

  • 1 small onion chopped
  • 1 1/2 sticks margarine
  • 1- 10 3/4 oz can mushroom soup
  • 1- 8 oz- processed cheese spread
  • 1/2 cup milk
  • 3 cups cooked white rice
  • 2- 10 oz- frozen broccoli spears
  • salt & pepper to taste

Preparation

Step 1

Saute onion in butter until tender. Set aside. Heat soup, cheese and milk over low heat. Add cooked onions along with butter. Stir until well combined. Spray a 13x9 baking dish with non stick spray. Place cooked ric ein bottom. Arrange broccoli spears on top. Pour heated ingredients over top. Bake at 325 for 20 minutes.
