Ingredients

  • 1 1/2 cups flour
  • 1 1/4 cups steel cut oats
  • 1/4 sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 2/3 cup melted butter
  • 1/2 cup milk + up to 1 tsp if needed
  • 1 egg, beaten
  • 1/2 cup fresh or frozen blueberries

Step 1

Heat oven to 450. In bowl, pour 1/2 cup milk over steel cut oats to soak while measuring other ingredients. Combine flour, 1/4 sugar, baking powder and salt. Combine melted butter and egg. Stir wet ingredients, including milk and steel cut oats into flour mixture with fork just until mixture holds together. Add up to additional 1 tsp of milk, if needed. Add fruit. With floured rolling pin, lightly roll dough on floured surface to 1/2 inch thickness. Cut with floured 2 inch cutter rerolling dough as necessary. Arrange scones on ungreased baking sheet about 2 inches apart. Brush with beaten egg. Sprinkle sugar over tops of scones. Bake until lightly browned - about 12 minutes. Remove from baking sheet and cool on wire rack.
