Ingredients
- 1 unbaked vinegar pastry pie shell
- 2 eggs
- 1 16 oz. can Libby's pumpkin
- 3/4 c. sugar
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
- 1 12 oz. can evaporated milk

Step 1
See @48779 to make the pie shell.
With a mixer, beat the eggs lightly in a large bowl. Mix in remaining ingredients in the order given. Pour into pie shell.
Cover the outer edges of the pie shell with aluminum foil to prevent overbrowning.
Bake at 425 for 15 minutes. Reduce to 350 and bake another 40-50 minutes or until a knife inserted near the center comes out clean.
This recipe is for a single 9" pie pan. It can also be used with 2 shallow 8" pie pans. Bake at 425 for 15 minutes, then at 350 for 20-30 minutes.
