Ingredients

  • 4 skinless, boneless chicken breast halves cut into 2 inch cubes
  • 1 Cup Mushroom caps
  • 2 small green bell peppers, quartered
  • 1 cup cherry tomatoes
  • 3 tablespoons honey mustard salad dressing
  • For the marinade
  • 2 cloves garlic, minced
  • 1/3 cup finely chopped yellow onion
  • 3 tablespoons reduced sodium soy sauce
  • 2 tablespoons vegetable oil
  • 2 tablespoons white wine vinegar or cider vinegar
  • 2 teaspoons ground ginger
  • 1/2 teaspoon chili powder

Step 1

To prepare marinade, in a shallow glass dish, combine garlic, onion, soy sauce, oil, vinegar, in Chile powder. Reserve 2 tablespoons of mixture. Add chicken to dish. Mix well. Cover with plastic wrap; refrigerate for 1 hour. Meanwhile, in a large bowl, combine mushrooms, peppers, tomatoes, and dressing. Mix well. Refrigerate until ready to use. Preheat broiler. Remove chicken from marinade. Discard marinade in dish. Using 4-10 in skewers, alterntely thread chicken and vegetables. Place on broiler pan. Broil 3 inches from heat, basting with reserved marinade, until chicken is no longer pink, about 5 minutes per side. Place on a serving platter.
