Chocolate Chip Banana Bread

Ingredients

  • 1/3 cup canola oil
  • 1 cup sugar
  • 3 eggs, beaten
  • 2/3 cup buttermilk
  • 4 to 5 bananas, mashed
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts, optional

Preparation

Step 1

Preheat oven to 325 degrees F. Coat two 9- x 5-inch loaf pans with canola spray.

In a large bowl, combine oil, sugar, eggs, buttermilk, and bananas; beat until thoroughly mixed. Beat in flour, baking soda, and salt until just blended. Stir in chocolate chips and nuts, if desired.

Pour batter into prepared loaf pans and bake 55 to 60 minutes, or until a toothpick inserted in center comes out clean. Let cool 5 minutes then remove from pans.
