My Daughter's Oriental Chicken

Ingredients

  • 3 whole chicken breast,cut in half
  • 5 Tbsp oil
  • 1/2 c brown sugar
  • 1/4 c vinegar
  • 1/2 tsp ginger
  • 2 Tbsp soy sauce
  • 1 can pineapple chunks
  • 3/4 tsp salt
  • 2 Tbsp corn starch
  • 1 c mandarin oranges
  • 1 green pepper,cut in strips
  • 1 red pepper,cut in strips

Preparation

Step 1

Brown chicken in oil and then pour fat off
Combine sugar,vinegar,salt,ginger and soy sauce
Pour over chicken
Simmer covered for 35 min
Remove chicken
Blend cornstarch and 2 Tbsp of juice (from cans of fruit)
Stir into pan
Add remaining oranges,pineapple and peppers and more juice if needed
Serve over rice sprinkled with chopped green onions
