Ingredients
- 3 whole chicken breast,cut in half
- 5 Tbsp oil
- 1/2 c brown sugar
- 1/4 c vinegar
- 1/2 tsp ginger
- 2 Tbsp soy sauce
- 1 can pineapple chunks
- 3/4 tsp salt
- 2 Tbsp corn starch
- 1 c mandarin oranges
- 1 green pepper,cut in strips
- 1 red pepper,cut in strips
Preparation
Step 1
Brown chicken in oil and then pour fat off
Combine sugar,vinegar,salt,ginger and soy sauce
Pour over chicken
Simmer covered for 35 min
Remove chicken
Blend cornstarch and 2 Tbsp of juice (from cans of fruit)
Stir into pan
Add remaining oranges,pineapple and peppers and more juice if needed
Serve over rice sprinkled with chopped green onions
