Chicken Broccoli and Ziti, J.C. Hilliary's

Ingredients

  • 1/4 cup olive oil
  • 4 boneless, skinless chicken braes, cit in 1-inch pieces
  • 1 cup king Arthur Flour, as required
  • 1 cup chicken stock
  • 6 tablespoons butter
  • 12 broccoli florets, blanched
  • 1 pound ziti pasta, cooked al dente
  • 1/4 cup parmesan cheese, grated
  • salt and pepper to taste

Preparation

Step 1

Lightly dredge the chicken in the flour

In a large, deep skillet, heat the oil. Saute the floured chicken until golden brown on all sides. Remove the chicken from the skillet and place on paper towels.

Drain the excess oil from the pan. Return skillet to the heat. Add the chicken stock and butter. Boil until slightly thickened and creamy. Add the broccoli and ziti. Toss well. Add the cheese, salt and pepper to taste.

Serve immediately with additional Parmesan cheese on the side.
