White Chocolate and Lime Cheesecake Bars

Ingredients

  • 7 oz chopped white chocolate, plus 1-oz bar (optional garnish)
  • 27 chocolate sandwich cookies
  • 1/2 cup heavy cream
  • 1 (8-oz) package cream cheese, at room temperature
  • 3 Tbsp sugar
  • 3 Tbsp freshly squeezed lime juice
  • 1 Tbsp grated lime zest
  • Lime slices or lime twists, for garnish

Preparation

Step 1

Line an 8-inch-square baking pan with foil, extending it over sides.

In a metal bowl set over a saucepan of simmering water, stir 7 oz white chocolate until melted. Grind cookies in a food processor. Add 2 Tbsp melted white chocolate to cookies. Blend well. Press into bottom of pan; refrigerate.

In a medium bowl, beat cream until peaks form. In a large bowl, beat cream cheese, sugar, lime juice, and lime zest until smooth. Beat in remaining white chocolate. Fold in whipped cream in 2 batches; spread over crust.

Chill until filling is slightly firm, at least 2 hours. Using foil to help, lift cheesecake out of pan. Cut into 9 bars. Garnish with white chocolate curls, if desired, and lime slices. (For curls, soften chocolate bar in microwave; run a vegetable peeler along 1 long side.)
