Sesame Noodles with Scallions and Radishes

Cook's Note: To peel ginger super-fast, just scrape the root with a regular spoon. The thin peel will come right off, and you won't waste any of the flesh.

Ingredients

  • 3/4 lb dried linguine
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1 Tbsp chopped fresh ginger
  • 1/2 tsp minced garlic
  • 2 Tbsp red wine vinegar
  • 2 Tbsp Asian sesame oil
  • 1 Tbsp honey
  • 3/4 tsp red pepper flakes
  • 4 scallions, sliced
  • 6 radishes, sliced thin

Preparation

Step 1

In a large pot of boiling, salted water, cook linguine until al dente. Drain. Rinse under cold running water and drain again.

Meanwhile, in a blender, puree peanut butter, 1/4 cup warm water, soy sauce, ginger, garlic, vinegar, oil, honey, and pepper flakes. If necessary, thin with an additional 1 or 2 Tbsp warm water.

Toss pasta with dressing and half the scallions and radishes. Spoon into a serving bowl. Top with remaining scallions and radishes.
