Ingredients

  • 2 t. canola oil
  • 1 lb. ground turkey or beef
  • 1 medium thinly sliced onion
  • 3 cloves minced garlic
  • 1 (28 oz) can stewed tomatoes
  • 1 (6 oz) can tomato paste
  • 1 1/2 cups water
  • 3 T. chopped fresh parsley
  • 1/2 t. salt
  • 1 t. dried oregano
  • 1 t. sugar
  • 1/4 t. pepper
  • 1 (10 oz) package shredded cabbage (for coleslaw)

Step 1

Heat oil in Dutch oven on medium. Add turkey or beef; cook 6 minutes or until no longer pink, stirring occasionally. Drain, if necessary. Add garlic; cook 1 minute. Add tomatoes and tomato paste. Stir in water, parsley, salt, oregano, sugar and pepper. Simmer 5 minutes. Mix in cabbage; cook, covered 6 to 8 minutes or until cabbage is tender, stirring occasionally. Serve in bowls. Per serving: 185 calories, 21 grams protein, 2 grams fat (11 percent calories from fat), 0.3 gram saturated fat, 18 grams carbohydrate, 47 milligrams cholesterol, 608 milligrams sodium, 4 grams fiber.
