Butternut Bisque

Ingredients

  • 4 lbs butternut squash
  • melted butter for brushing
  • 1 tbls kosher salt
  • freshly ground pepper
  • 1 qt vegetable broth
  • 5 tbls honey
  • 2 tsp fresh ginger, minced
  • 3/4 cup heavy cream
  • 1/2 tsp nutmeg, freshly grated

Preparation

Step 1

1) Preheat oven to 400 degrees. 2) Cut squash in half and remove seeds. 3) Brush squash with butter and season with salt and pepper. 4) Roast for 30-40 minutes or until squash is soft. 5) Scoop squash from the skin and put into a pot with the broth, honey, and ginger. 6) Bring to simmer and puree using an immersion blender. 7) Stir in the cream and nutmeg. 8) Season if needed. 9) Serve with grated nutmeg for garnish.
