Ingredients

  • 1 lb Round steak or stew meat, cut in 1 1/2 to 2 inch pieces.
  • 2 Tbls cooking oil
  • 1 c water
  • 1 bay leaf
  • 1 teas salt
  • 1/8 to 1/4 teas crushed red pepper
  • 1 can 16-oz red kidney beans
  • 1 cup uncooked rice
  • 2 medium green peppers chopped in 1-inch pieces
  • 1 medium onion, chopped
  • 1 1/2 teas salt
  • 1/2 to 1 teas curry powder
  • 1/4 teas pepper

Step 1

Saute the meat in the oil, add the water, bay leaf, 1 teas salt and simmer for about 45 minutes. Add enough water to broth to measure 2 cups. Mix all remaining ingredients and bake in 350* oven for 45-50 minutes.
