Ingredients

  • 2 cups all purpose flour
  • 3/4 cup sugar
  • 1 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup chopped pecans
  • 1 large egg
  • 1/4 cup vegetable oil
  • 2 teaspoons grated orange rind
  • 3/4 cup orange juice
  • 1 1/4 cup chopped fresh rhubarb

Preparation

Step 1

In large bowl combine the flour,sugar,baking powder,baking soda and salt. In a medium bowl beat egg. Add oil, orange juice and rind. Add to flour all at once and still just till batter is moist. Stir in rhubarb. Can add a dollop of sour cream to insure a moist muffin.


Bake 25 to 30 minutes in 350 degree oven.
