Fruit & Brie Quesadillas

Ingredients

  • 4 oz brie, rind removed
  • 2 - 8 inch flour tortillas
  • 2 scallions, chopped
  • 4 Tbls fruit salsa

Preparation

Step 1

Spread half of the brie on 1 tortilla and top with scallions. In a large, nonstick skillet, cook the tortilla cheese side up, until the cheese is melted (2-3 mins). Top with half of the salsa; season with salt. Fold in half and transfer to a cutting board. Repeat with remaining ingredients.
