Ingredients
- for The Whoopie Pies:
- 2 cups King Arthur flour
- 2 teaspoons baking soda
- 1/4 teaspoon salt
- 1/3 cup cocoa
- 1 cup sugar
- 1 egg
- 1/3 cup vegetable oil
- 1 teaspoon vanilla
- 3/4 cup milk
- For The Filling:
- 3 tablespoons Marshmallow Fluff
- 1 stick margarine, at room temperature
- 1 cup Confectioner's sugar
- 1 teaspoon vanilla
Preparation
Step 1
Preheat oven to 350 degrees. For The Whoopie Pies: In a large bowl, cream the sugar, vanilla and the egg. Add the vegetable oil and blend well. Add the milk and blend well. Sift together all the dry ingredients. Add to the liquid and mix well. Drop dough, by teaspoonful onto a greased baking sheet. Bake in 350 degree oven for 10-12 minutes. Remove baking sheet from oven and cool on wire rack for 10-15 minutes before removing pie sections. For The Filling: In a medium bowl, mix together all the filling ingredients until well blended. Set aside. One the Whoopie pie segments have cooled. Drop about 2 tablespoons of filling on one half. Spread filling and place other half of the pie on top, sandwich style.
