Ingredients

  • 2 cups flour
  • 1/3 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup roasted, salted macadamia nuts, chopped
  • 2/3 cup coconut
  • 1/2 cup dried pineapple, chopped
  • 3/4 cup milk
  • 1/2 cup butter or margarine, melted
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla

Preparation

Step 1

Preheat oven to 400 degrees. Grease muffin pan or line with muffin cups.

Combine first four ingredients, stir to mix. Add nuts, coconut, and pineapple; toss to coat.

Mix together wet ingredients. Add dry ingredients to wet ingredients, and mix just until combined.

Spoon into prepared pan. Bake 15-20 minutes or until done.
