Ingredients

  • 2

    cups flour

  • cup sugar

  • 2

    teaspoons baking powder

  • ½

    teaspoon salt

  • 1

    cup roasted, salted macadamia nuts, chopped

  • cup coconut

  • ½

    cup dried pineapple, chopped

  • ¾

    cup milk

  • ½

    cup butter or margarine, melted

  • 1

    egg, lightly beaten

  • 1

    teaspoon vanilla

Directions

Preheat oven to 400 degrees. Grease muffin pan or line with muffin cups. Combine first four ingredients, stir to mix. Add nuts, coconut, and pineapple; toss to coat. Mix together wet ingredients. Add dry ingredients to wet ingredients, and mix just until combined. Spoon into prepared pan. Bake 15-20 minutes or until done.
