Three-Bean Turkey Chili

Ingredients

  • 1 lb. ground turkey
  • 1 small onion, chopped
  • 1 can (28ozs.) diced tomatoes, undrained
  • 1 can (15 ozs.) chickpeas, rinsed and drained
  • 1 can (15 ozs.) kidney beans, rinsed and drained
  • 1 can (15 ozs.) black beans, rinsed and drained
  • 1 can (8oz.) tomato sauce
  • 1 can (4 ozs.) chopped mild green chiles (or I used 1 green bell pepper, chopped)
  • 1 to 2 tblsps. chili powder

Preparation

Step 1

1. Cook and stir turkey and onion in medium skillet over medium-high heat until turkey is no longer pink. Drain and discard fat. Tranfer to Crock-Pot slow cooker.

2. Add tomatoes with juice, beans, tomato sauce, chilies and chili powder, mix well. Cover, cook on HIGH 6 to 8 hours or until done.
