    large or 6 small peppers

    Tbsp chopped onion

  • 1

    Tbsp chopped green peppers

  • 1

    lb ground turkey

  • 1

    8 oz can tomato sauce

  • 1/4

    tsp chili powder

  • 1/2

    tsp worcestershire sauce

  • 1/2

    cup cooked quinoa

  • 2

    small whole tomatoes peeled and cut up

  • 1/2

    cup water

  • salt and pepper

  • 1/2

    cup grated sharp cheddar cheese or

Directions

Remove tops and sed from peppers. Cook whole peppers in boiling salted water for 3-5 minutes: invert to drain. Brown onion, chopped pepper and ground turkey in a skillet. Add remaining ingredients(reserve 3 tsp tomato sauce and cheese) Simmer for 10 to 15 minutes. Stuff peppers with mixture: place 1 tsp tomato sauce on top of each pepper. Place peppers on cooking grate. Grill 10 to 20 minutes. Top with grated cheese and heat until cheese melts, about 5 min longer.
