Ingredients
- 1 bag rice (boil-in-bag)
- 5 cups chicken broth
- 1 1/2 cups chopped uncooked chicken
- 1 cup sliced celery
- 1 cup sliced carrots
- 1/2 cup chopped onion
- 1/2 t. pepper
- 1/2 t. dried thyme
- 1 bay leaf
- 1 T. lime juice
Preparation
Step 1
Prepare rice and set aside.
Combine everything except rice and lime juice. Bring to a boil over medium-high heat, stirring once or twice. Reduce heat to low; simmer 10 to 15 minutes or until chicken is cooked through. Stir in rice and lime juice.
