KIR ROYALE MOLD

Ingredients

  • 2 cups boiling water
  • 1 pkg (6 ounces) or 2 pkgs of (3 ounces each) jello sparkling wild berry or sparkling white grape flavor gelatin dessert
  • 1-1/2 cups cold club soda, seltzer or champagne
  • 2 tbsp creme de cassis liqueur (optional)
  • 2 cups raspberries

Preparation

Step 1

Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. Refrigerate 15 minutes. Gently stir in cold club soda and liqueur. Refrigerate about 30 minutes or until slightly thickened. (gelatin is consistency of unbeaten egg whites). Gently stir for 15 seconds. Stir in raspberries. Pour into 6-cup mold.

Refrigerate 4 hours or until firm. Unmold. Garnish with additional raspberries and fresh mint. Store leftover gelatin mold in refrigerator.

Unmolding gelatin:
Moisten fingertip and gently pull gelatin from top edge of mold.

Dip mold in warm, not hot, water, just to riim. for about 15 seconds.

Lift mold from water, hold upright and shake to loosen gelatin.

Moisten chilled serving plate with water. (This allows gelatian to be moved after unmolding). Place moistened serving plate upside down on top of mold.

Invert mold and plate; holding mold and plate together, shake slightly to loosen.

Gently remove mold. If gelatin does not release easily, dip mold in warm water again for a few seconds. Remove mold; center gelatin on serving plate.
