Ingredients

  • 6 Cups Sliced Celery (About 2 Bunches)
  • 1 Package (9 Ounces) Sharp Cheddar Cheese
  • 1/2 Cup Butter (1 Stick)
  • 2 Cups Coarse Soft Bread Crumbs (4 Slices)
  • 2 Tablespoons Flout
  • 1/2 Teaspoons Salt
  • 2 Cups Milk
  • 2 Tablespoons Grated Parmesan Cheese

Preparation

Step 1

Cook celery in boiling water in medium-size saucepan, 14 minutes. Drain. Shred enough of the cheese to make 1 1/2 cups; cut the remaining into small cubes; set aside.

Melt butter in medium size saucepan; measure out 4 tablespoons and drizzle over bread crumbs in small bowl; toss lightly to mix.

Sift flour, salt and pepper into remaining melted butter in a saucepan; cook, stirring constantly until bubbly. Stir in milk, continue cooking and stirring until sauce thickens and boil 1 minute.

Stir in shredded cheese until melted, the Parmesan Cheese and celery. Spoon into shallow 8 cup baking dish. Sprinkle with bread crumbs and cheese cubes. Bake at 350º for 15 minutes.
