Knokkebrod (Scandenavian Flat Bread)

Special equipment - hard tack rolling pin

Ingredients

  • 1/2 c shortening
  • 1/2 c sugar
  • 1 c sour cream
  • 1 c buttermilk
  • 4 c flour
  • 1 tsp baking soda
  • 1 tsp baking powder

Preparation

Step 1

Cream shortening and sugar. Add sour cream and buttermilk. Sift and add flour, baking soda and baking powder. Roll out thin a section of dough with hard tack rolling pin - about the size of a cookie sheet. Cut into pieces with knife or pizza cutter. Bake at 350-375 degrees about 8-10 minutes. Watch as this gets brown and burns easily.
